I use a small food processor to make the crust. If you don’t have one, I can’t recommend it enough because it’s such a time saver in the kitchen.

If you don’t have one yet, you can use a ziplock bag and a rolling pin to crush the graham crackers.

Also, a good set of spatulas. I use the silicone ones and they are perfect for getting every last drop of cheesecake from the bowl.

FAQs

Why are my mini cheesecakes falling in? ›

Not enough structural support: Cheesecake may need eggs and other binding agents to hold it up and keep its shape. Not baked long enough: If the cheesecake hasn't been baked for the full amount of time specified in the recipe, it may not have had enough time to set properly.

What makes cheesecake crumble? ›

An overbaked cheesecake will cause unattractive cracks and a dry, crumbly texture. Because cheesecake is a custard, it won't be completely firm when done. The easiest way to make sure you don't overbake it is to give it a little jiggle. Take a wooden spoon and give the cake pan a gentle tap on the side.

Why did my no bake cheesecake collapse? ›

Why cheesecake cracks: a sudden temperature change. Cheesecake will sink and contract a bit as it cools; if this cooling happens too suddenly, the cake can crack.

How to make a James Martin cheesecake? ›

Heat the oven to 240c. Butter a 23cm, deep, loose bottom tin and line with paper. Whisk together the cream cheese and sugar for 2 minutes, add the flour eggs and vanilla whisk until smooth and pour into the tin. Bake for 20 minutes then drop the oven temperature down to 180c and cook for another 20 minutes, cool.

How do you keep mini cheesecakes from sinking in the middle? ›

Use room temperature ingredients.

If your cheesecake ingredients are too cold they will require longer mixing and longer mixing adds too much air into the filling which can cause air bubbles on the surface of your cheesecake or can cause your cheesecakes to sink in the middle.

How do you know when mini cheesecakes are done? ›

The secret to testing a cheesecake for doneness: Jiggle it. Define jiggle, you say? Gently shake the cheesecake (wearing oven mitts, of course). If the cheesecake looks nearly set and only a small circle in the center jiggles slightly, it's done.

Why do mini cheesecakes crack? ›

Don't Over Mix

Mix the batter until the ingredients are thoroughly incorporated, and not any longer. Over-beating does not improve the texture and make the cheesecake creamier; instead, it whips too much air into batter causing the cake to puff up (similar to a souffle), then sink, shrink, and crack.

What happens if you over mix cheesecake batter? ›

When making your filling, overmixing can lead to incorporating too much air into the batter. Once baked, the air bubbles will burst, and the cheesecake will fall and crack. THE FIX: The number one reason why you'd overbeat your batter is because you're having dificulty incorporating cold ingredients.

How to fix a no bake cheesecake that didn't set? ›

If your cheesecake filling goes soupy in texture, don't worry—you can fix it! Just add a little gelatin to the mix, and it will set up in the fridge just fine.

Why did my cheesecake rise and then sink? ›

When the batter is overmixed, too much air is added and will cause your cake to rise in the oven and then collapse and crack when being removed. Don't overbake your cake. It may crack if it's too dry. Many people overbake their recipes to “play it safe”.

Why did my Japanese cheesecake crack? ›

A bain-marie or hot water bath is essential for baking the cake. The hot water bath stabilizes the temperature in the oven and prevents it from being overly hot and dry. Hot and dry oven means cracked cheesecake.

What is the difference between New York cheesecake and original cheesecake? ›

Regular cheesecake relies on heavy cream and sour cream to thin the batter and create a silkier, creamier texture. New York cheesecake is heavy on the cream cheese which is why it's so dense and rich. Extra cream cheese isn't the only thing that makes New York cheesecake so special.

Why put a pan of water in the oven when baking cheesecake? ›

A water bath helps cheesecakes cook evenly, ensuring the edges don't bake faster than the center. The process gently bakes the custard slowly, ensuring a smooth and creamy filling. Otherwise, the dessert may get a rubbery texture. It also prevents cracking along the surface and browning on the top.

What is the difference between New York cheesecake and Italian cheesecake? ›

The main difference between what we would consider typical New York American cheesecake and Italian cheesecake is that in Italy, cheesecake is made with ricotta rather than cream cheese. It is also a bit lighter and dryer, more cakelike and less cloying.

How to stop cheesecake from collapsing? ›

Don't overmix ingredients.

You want to start with room temperature cream cheese. This way you will be able to blend your ingredients very easily without overmixing. When the batter is overmixed, too much air is added and will cause your cake to rise in the oven and then collapse and crack when being removed.

Can you eat a sunken cheesecake? ›

The only thing that might be affected is the texture (it might be slightly coarse or a tad on the dry side – for a cheesecake), but I can guarantee it will still be delicious. There is only 1 very simple thing you have to do with your cracked (or sunken) cheesecake and that is: … cover it up with a topping!

How do you keep mini cheesecakes from cracking? ›

Baking in a water bath is simply adding a pan of hot water to the oven while baking foods like cheesecakes that are prone to cracking from the heat of the oven. A water bath adds moisture to the oven which helps the cheesecake bake evenly without the outside getting overcooked.

What happens if you overcook cheesecake? ›

Avoid Overcooking

DON'T overbake. Overbaking a cheesecake can cause cracks on the surface. The center of the cheesecake should still be a little wobbly, the filling still pale, and the outer ring slightly puffy and firm. It will continue to cook as it cools and maintains that smooth and rich texture.
