There is a reason Jamie Oliver has the celebrity chef status that he does, especially after all the reviews for his ultimate mac and cheese recipe. Lucky for us, I was able to translate his recipe to become dairy-free and still turned out to be the most luscious, velvety, creamy vegan mac and cheese ever.

The key to this being the ultimate mac and cheese is the caramelized onions, mango chutney, vegan Worchester sauce, and the crispy faux-sausage breadcrumb topping. I know this sounds extra and far from a traditional mac and cheese, but trust me, this recipe is well worth the extra effort.

This vegan version of Jamie Oliver’s Mac and Cheese Recipe is the perfect dish to bring to a vegan or non-vegan gathering to prove that vegan food really is impressive and delicious.

INSTRUCTIONS FOR JAMIE OLIVER MAC AND CHEESE (VEGAN)

  1. Start by boiling water and cooking macaroni noodles for 5 minutes. You want them partially cooked, so they finish cooking in the oven.
  2. Drain noodles, saving some of the pasta water, and set pasta aside until ready to use.
  3. In a large pot, heat a knob of vegan butter.
  4. Once the pan is hot, add 2 thinly sliced onions that we will be carmelizing. Jamie Oliver used 3 smaller onions in his version, but I feel as though 2 large onions are plenty. Cook the onions at medium-high heat, tossing them around occasionally, for 15 minutes. They’ll shrink and turn lightly golden or caramelized.
  5. Add the flour, tossing to coat the onions. Slowly add the soy milk to the pan. Soy milk has a stable texture and higher protein content, so it will thicken and turn into a creamy sauce, more than almond or other types of plant milk. Start with a small amount of milk and stir into onions, once it has absorbed, slowly pour in the rest of the soy milk.
  6. Let the pot simmer for about 10-15 mins, uncovered, stirring occasionally.
  7. Grate 100 grams, or roughly 1 cup of vegan cheddar cheese, soft vegan cheese and vegan parmesan cheese. Add to the onion sauce mixture and save some for the top of the mac and cheese before baking. Stir in the cheeses, then take the pot off the heat.Tip: Jamie Oliver uses three types of cheese in his original recipe, which adds a depth of flavour and allows for a creamy mac and cheese. Any 3 types of vegan cheese, with different flavours and textures, will work, but I decided to use my three favourite types. A cheddar style cheese, a soft cheese, and a parmesan style cheese are the 3 kinds of cheese I recommend to create a similar flavour and texture profile.
  8. Add in the mustard, Jamie uses English mustard, but I use German because it’s what my Oma would approve of.
  9. Now, add the mango chutney; the strangest ingredient, but so very important to making this the best mac and cheese.
  10. Next, add the vegan Worcester sauce.
  11. Stir the sauce, and add a splash of the reserved pasta water and the par-cooked pasta.
  12. Transfer the mixture into a casserole dish, top with the remaining cheese, and place in a preheated oven at 400 degrees Fahrenheit for 30 minutes.
  13. While the vegan mac and cheese is in the oven, remove the faux sausage from the casing and crumble it into a pan heated to medium heat.
  14. Once it’s almost finished cooking, add chopped parsley and breadcrumbs. Cook them in the access grease from the sausage until they go golden brown and toasted.
  15. Remove the mac and cheese from the oven and scoop onto plates, top with the breadcrumb and sausage crumble and enjoy!

FAQs

Do you absolutely need milk for mac and cheese? ›

To make mac and cheese without milk, the best choice is to find something that has a similar texture and a milk flavor. Things like heavy cream, almond milk, oat milk, yogurt, cream cheese, and even pasta water all work very well in boxed mac and cheese.

What does adding more milk to mac and cheese do? ›

Sauce too thick? Stir in a splash of milk and mix until the sauce has loosened up. (This is also a great trick for reheating mac and cheese - if you're microwaving leftovers and the sauce seems to have dried up, stir a splash of milk or half-and-half into the pasta to bring the sauce back to life!)

What is vegan mac and cheese made of? ›

The super creamy sauce still contains a small amount of cashews, but its base is blended yellow potato and sweet potato. The yellow potato gives it a delightful gooey texture, and the sweet potato makes it vibrant orange. Apple cider vinegar, garlic, onion powder, and nutritional yeast perfect its cheesy taste.

Does vegan mac and cheese taste the same? ›

Vegan mac and cheese is essentially the same thing as regular mac and cheese, so… pasta with a cheese sauce, duh. BUT it isn't made with cheese. That being said, it still tastes like macaroni and cheese AKA the ultimate comfort food.

What happens if you use water instead of milk in mac and cheese? ›

Water actually works perfectly well as a milk substitute in mac and cheese. It adds all the liquid you need, though it doesn't have the creaminess or flavor that other substitutes add. However, if you add a little pasta water, instead of plain tap water, to your cheese sauce, you might get better results.

Is milk or evaporated milk better for mac and cheese? ›

Key #2: Use Evaporated Milk

Evaporated milk is a highly concentrated source of milk protein micelles—bundles of proteins that can act as powerful emulsifying agents—which help to keep the sauce creamy and smooth.

How to keep mac and cheese creamy? ›

You want equal amounts of butter and flour by weight. This is key. Throw in too much flour, and sure the sauce might get thick, but it also might taste floury and be lumpy. Even if you get the roux right, use too much or reduce your sauce down too far, and the macaroni and cheese will turn out dry.

Can you use almond milk in mac and cheese? ›

Yes, almond milk works great for mac and cheese! Just be sure to get an unsweetened version. If it doesn't say “unsweetened” or “no sugar”, it is likely that it's a sweetened version. Do NOT use regular/sweetened almond milk since this will make the mac and cheese sweet, which is hard to neutralize.

What is a vegan substitute for milk in mac and cheese? ›

Almond milk is a popular plant-based milk that's a great substitute for regular cow's milk. It has a nutty flavor, which can add a subtle richness to your mac and cheese. As it's used as a common milk substitute, you can simply put the same amount of almond milk as you'd put regular milk.

Does vegan mean dairy free? ›

Veganism is one of the strictest diet choices - no ingredients directly from animals or where animals are used or harmed in processing. This means no meat, fish, or dairy, but also no white cane sugar and no honey. For some vegans, even certain vegetables, fruits, and nuts are off-limits.

What ingredient is in vegan cheese? ›

What Ingredients Are in Vegan Cheese? Vegan cheeses are 100% animal-free and made using vegetable proteins. Usually, they're made from soy; nuts, such as cashews and macadamias; and vegetable oils, such as coconut oil. You can also find cheeses that derive from agar, tapioca, peas and arrowroot.

Does Trader Joe's have vegan mac and cheese? ›

People Have Been Spotting Trader Joe's Vegan Mac & Cheese In Stores And It's A Total Game-Changer. Vegans, your time is now.

Can I make Annie's mac and cheese without milk? ›

While you technically can use water instead of milk in your mac and cheese recipe, it may result in a less creamy and flavorful sauce. Dairy-free milk substitutes, such as almond milk or oat milk, offer a more satisfying alternative that helps maintain the desired texture and taste.

What is a substitute for milk in pasta sauce? ›

Non-dairy milk: While soy milk is my go-to for dairy-free sauces, you can also use almond, cashew, or oat milk. Choose an unsweetened, unflavored milk. All-purpose flour: This combines with butter to make the roux.

Can you use oil instead of milk for mac and cheese? ›

To make a roux, heat one tablespoon of flour (regular or gluten-free) and one tablespoon of fat like butter or oil over medium heat. Stir constantly for 2-3 minutes, or until the flour taste has disappeared. Mix the roux into mac and cheese just as you would milk.

Can you make roux without milk? ›

Dairy-free spread: if you're making a sauce that needs to be vegan or dairy free, you can easily make a roux with a dairy-free butter alternative. Try using the butter-flavoured ones rather than ones made with coconut oil. Flour: always use plain white flour.
